The Paloma at Mesa Loca — a modern Mexican eatery that has taken over the former Cock & Bull space on Hyde Park Square — is a tall, refreshing drink based on reposado tequila and freshly squeezed red grapefruit juice. Already that should have your attention but the addition of fragrant St-Germain liqueur and some extra sweetness with simple syrup should leave you demanding, “Line ‘em up.” The drink isn’t as sugary as a margarita and it doesn’t involve a salt rim — two things that can ruin a cocktail. It’s very hard to reproduce the drink at home so you’ll just have to keep going back to Mesa Loca for the real deal.
