In fall of 2021, North South Baking Co. opened a brick-and-mortar space in partnership with Ludlow, Kentucky-based Bircus Brewing Co. The latter takes the reins at night while Kate Nycz’s North South slings baked goods by day. Customers can treat themselves to fresh-baked bread, pastries, pies and more. But cruffins — a croissant-muffin hybrid, as the portmanteau suggests — are a fan favorite. Nycz uses locally sourced ingredients to make creative and fun seasonal flavors throughout the year. From hibiscus key lime to pumpkin pie to Boston cream, they’re a crispy yet fluffy wonder.
