If you love barbecue, and you also love Tex-Mex-inspired casual cuisine, then what I'm about to tell you might excite your taste buds.

Popular restaurant chain Chipotle is testing a new protein in Cincinnati (and a portion of Sacramento, California): smoked brisket.

The brisket is available for a limited time, and features the smoked meat, seasoned with a "special spice blend," grilled daily and finished with a Mexican pepper sauce.

“We’re thrilled to offer a new, responsibly-sourced brisket that tastes terrific and meets our industry-leading Food with Integrity standards,” said Chris Brandt, chief marketing officer, in a press release. “The richness of our real smoked brisket recipe delivers a craveable new flavor to our guests as we continue to innovate across our menu.”

This testing period will give the establishment a chance to analyze customer feedback prior to deciding if they will launch nationally.

The "state-gage process" of testing isn't new to Chipotle. The eatery offered and evaluated the feedback of their carne asada, supergreens salad mix and queso blanco in 2019 and 2020, >which resulted in a national roll out.

Over the summer they began testing various cities for a "digital-only quesadilla" and cilantro-lime cauliflower rice.

Additionally, the restaurant chain introduced a variety of beverages like organic lemonades, teas and agua frescas at all of their United States restaurants.

The brisket protein officially rolled out (temporarily) on Dec. 1 and will be available in-restaurant, online, through mobile orders and via contactless delivery at participating restaurants.
