What’s wine and cheese without crackers? It’s just incomplete. And that brings us to Maria Walley, who has the enviable position of supplying vinophiles with an essential element of their favorite meal. Maria is the owner of Daelia’s Biscuits for Cheese, a new company selling delicious English biscuits — that’s crackers to you Yanks — nationwide at Whole Foods. Locally, they can also be found at Party Source and Jungle Jim’s. The Almond-Raisin version goes great with goat cheeses and aged cheddars. Maria suggests the Hazelnut with Fig bickies with a salty bleu.

CityBeat: What’s the last great meal you ate and where did you eat it?
Maria Walley:
Hong Kong Won Ton Big Bowl soup at Suzie Wong’s, with shrimp and pork wontons. That’s the most recent one, but it’s not my favorite. That’s the Chicken Noodle — the one with mushrooms. And the spicy Korean soup, Jan Chi Guksu. I’m just crazy about noodles in broth.

CB: Is that because you just had a cold?
MW:
No, although I did just have a cold. I love Suzie Wong’s noodle soup. We live nearby and go there a lot, and I say “I could eat this all the time” every single time I go. It’s the ultimate comfort food. And really healthy, too. It takes a long time to eat it and you don’t have any room left to eat anything else afterwards!
