Bircus Brewing Co. — a circus-themed brewery in Ludlow — is celebrating its third anniversary on Wednesday, Nov. 25. The brewery opens at 4 p.m.
The outdoor beer garden at 322 Elm St. will feature fire pits, canned Bircus beers, growler fills and two special bottle releases: a wheat wine and an imperial stout.
The brewery is also marking its milestone by opening the new Bircus Grill, a wood-fired pizza kitchen (with a pasta menu coming soon) — launched with help from Michael Cusumano, head chef of Venice, Italy’s JW Marriott Fiola at Dopolavoro.
"It's a true pleasure to be back here amongst friends and family that I haven't seen in many years. It's an honor to be serving the food that I have grown to love and learned to make while I have been abroad for all this time," says Cusumano in a release.
The pizza menu includes a classic margherita; a vegetarian option with San Marzano tomatoes, roasted eggplant, mozzarella and kalamata olives; and the meaty "Are You Looking at Me?," with mozzarella, arugula, dried cherries and prosciutto crudo.
Bircus founder Paul Miller met Cusumano in middle school in Crescent Springs and they remained friends through high school and over the past 25 years, "with Miller heading to the circus and Cusumano to cook in Italy," says Bircus.
Pizzas — and beer — can be enjoyed in the outdoor beer garden or to go until Kentucky's COVID regulations are lifted and indoor service can resume.
