One of Cincinnati’s best restaurants is now, unexpectedly, serving burgers — but you’ll have to act quick, as there’s only 10 available each night while supplies last.

Wildweed, the eclectic fine-dining restaurant at 1301 Walnut Street in Over-the-Rhine owned by chefs David and Lydia Jackman, has put a decadent ‘bistro burger’ on its menu.

Previously, David Jackman stated he’d never put a burger on the menu, but that changed in February when the restaurant acquired a half-cow from Glasgo-Darling Farm. Wanting to utilize every part of the cow, the restaurant served up “squish, not smash” burgers for a few months at shockingly low prices to the delight of literally every foodie in Cincinnati.

Now, after once again acquiring a half-cow from the same farm, the Jackmans are bringing burgers back to the menu in a completely different form.

This burger is more expensive than the last one, but about three times as big. It’s served as a ‘Juicy Lucy’ — as in, two giant beef patties with cheese stuffed inside prior to cooking — utilizing Nati Gouda from local cheesemaker Urban Stead, caramelized fennel, shaved chanterelles and fermented truffle aioli on a brioche bun from Sixteen Bricks. The burger is cooked medium rare, then later marinated in beef fat and seared, which makes for crispy edges with an unbelievably juicy (and cheesy) interior.

Again, only 10 burgers are available each night, and the burger can only be ordered while sitting at the bar. David Jackman says that “the burger disappears (from the menu) when the beef from our half cow does.” If it’s as popular as the last Wildweed burger, that’ll be quicker than anyone thinks.”
