New chef Zachary Barnes’ menu will turn The Rooftop at 21c into a coastal-inspired oasis with Peruvian-style fare. 21c says Barnes brings international inspirations “with a slap of Southern behind it.” He joined the hotel in 2021 as a line cook and was appointed as executive chef at Metropole and The Rooftop at 21c this year. His style of cooking embraces simplicity with intentionality, where every ingredient plays a role to create refined, but approachable, dishes, 21c says.
“When I moved across the country from Seattle to Cincinnati, Chef Vanessa Miller took me under her wing. Her guidance and mentorship have prepared me to showcase my distinct personality and point of view through the menus at Metropole and The Rooftop at 21c. Above all, her friendship and support have meant the world to me. She actually just officiated my wedding ceremony on the rooftop, so it holds an even more special place in my heart,” Barnes said in a press release.
21c says each dish is meant to be shared alongside the coastal-inspired cocktails, with fresh takes on traditional summer sips like caipirinhas, palomas and margaritas. They also offer buckets of ice-cold beer to share, as well as non-alcoholic drinks.
