Deeper Roots Adding Baked-In-House Pastries to Coffeehouses

Pastry chef Megan Ketover is adding croissants, Danishes and more to Deeper Roots' menu.

A popular coffee shop and roastery is now also in the baking business. Deeper Roots has announced it’s adding an in-house bakery to its West End roasting facility, with pastry chef Megan Ketover joining the team.

Ketover will be crafting pastries and baked goods for Deeper Roots’ coffee bars, as well as for Daylily Deli in Columbia Tusculum. She has led teams in pastry kitchens throughout downtown Cincinnati, including Orchids at Palm Court, the Netherland Plaza, Boca Restaurant Group and Khora. She’s also competed on national shows like the Food Network Challenge and Bravo’s Top Chef: Just Desserts. Ketover was also awarded the American Culinary Federation’s Pastry Chef of the Year for the Northeast Region.

Deeper Roots says adding Ketover to the team catalyzed their new baking program.

“A cappuccino and a croissant go hand in hand,” Deeper Roots’ director of community engagement, Jon Lewis, said in a press release. “We’ve always sought to stock our bakery cases with goods that reflect our vision of how beautiful the coffee experience can be. And now with our own bakery, we can make that dream come true every day.”

Deeper Roots says Ketover excels at crafting treats using local, seasonal and specialty ingredients, and her creations are the perfect complement to their coffee.

“Megan is a baker par excellence. She is a leader in Cincinnati’s sensational baking scene,” Lewis said. “We’re chuffed to work with someone so thoughtful and proficient.”

New offerings will include classic butter croissants, pain au chocolat and seasonal fruit and cream cheese Danish pastries. Deeper Roots said Ketover refines the traditional techniques and recipes to include high-quality ingredients like high-fat butter from France, grass-fed butter from New Zealand, pure cane sugar and fresh-milled flour.

The coffee shops will also have travel cakes – mini loaves and muffins like banana bread with brown butter streusel, coffee cake with cinnamon crumble and chocolate zucchini walnut with a dusting of turbinado sugar. They’ll also have a seasonal rotation of savory specialties. Currently, they’re featuring a cheddar herb scone, ham and cheese croissant and roasted tomato and goat cheese Danish.
