You Can Find Authentic Texas Barbecue and Karaoke at This New Joint in Liberty Township

Giddy up! A new barbecue joint in Liberty Township is promising slow-cooked meats; cheap, strong drinks; and a good time.

Cowboy Sally’s Texas Barbecue, located in the former McK’s BBQ at 7521 Gibson St., held its grand opening Wednesday. The restaurant describes its style as “a Texas saloon gone wild,” with a modern rustic interior and glowing neon signs.

The menu is centered on authentic Texas-style barbecue, cooked low and slow to infuse it with a rich, smoky flavor, says Cowboy Sally’s. Meat options include all the classics, from brisket and burnt ends to baby back ribs and chopped chicken, as well as a couple not-your-usual-BBQ-suspects like hot smoked salmon and tofu “burnt ends.” Guests also have the option of getting their meats as tacos, hoagies, sliders or as a plate with two sides, cornbread, pickles and barbecue sauce. They also come à la carte as a quarter-pound or half-pound.

Sides are made from scratch and feature classics like creamy mac and cheese and mashed potatoes, as well as classics with a twist, like the hot honey butter and pepper jack cornbread. To drink, choose from a selection of wine, beer or Cowboy Sally’s “cheap and strong” cocktails, including the Vodka Lemonade or Ole Smokey Peach Tea Whiskey Slushees and the Giddy-Up! (vodka; tequila; Ole Smokey White Lightnin’; whiskey; pineapple, apple and orange juice; lime; and fruit).

Cowboy Sally’s is open for dine-in (with the help of robot servers), takeout and catering. In addition to the food, the restaurant will also host karaoke nights.
