This week, Coppin’s Restaurant & Bar in Hotel Covington shared with us some of their signature cocktails. You can find these concoctions in their new cocktail recipe book, Cheers to Five Years, which celebrates five years of business for the hotel and restaurant. The book includes 30 cocktail recipes from the Coppin's staff and a sprinkle of mixology basics.

Persephone

This cocktail is a curious combination of earthy, smoky, sweet and salty. An elegant and innovative take on the margarita, it has bright candied grape and pomegranate notes that are brought into a swirling balance with smoky mezcal and earthy beet juice. At the bar, $1 from each sale is donated to Making Strides Against Breast Cancer Organization.

Ingredients:

  • ½ oz. Natalie's beet-orange juice *into glass first*
  • ¾ oz. fresh-squeezed lemon juice
  • ¾ oz. Greek grape syrup
  • ½ oz. PAMA pomegranate liqueur
  • 1 ½ oz. Los Vecinos Mezcal
  • 2 dash Bittercube Bolivar bitters
  • Garnish: Black Lava salt rim. Mint leaf + Flower

Instructions: Build all ingredients except beet juice in tin. Standard shake. Double strain. Garnish.

Quince Charming

This charcuterie-inspired cocktail is made with allspice liqueur, Kasama Rum, quince, vanilla and fresh lemon juice. It's cleverly garnished with a cube of Manchego cheese that pairs wonderfully with this drink. Quince is a unique pomme fruit that, when prepared into a quince paste, is often found on cheese boards and pairs well with salty components. Each sip of this cocktail uncovers a layer of fruit or spice that only makes your desire for another sip grow.

Ingredients:

  • ½ oz. fresh-squeezed lemon juice
  • ½ oz. homemade vanilla-quince syrup
  • 1 ½ oz. Kasama small-batch rum
  • ½ oz. St. Elizabeth Allspice Dram
  • 1 dropper Bittermens Elemakule Tiki Bitters
  • Top with 2 oz. Jumex pear nectar
  • Garnish: 1 cube Manchego cheese skewered

Instructions: Build all ingredients except pear nectar in tin. Short Shake. Dump from tin into glass. Top with pear nectar and garnish
